Ingredients

  • 1.5 oz Rum
  • 0.75 oz Cynar
  • 1.5 oz Pineapple Juice
  • 0.5 oz Fresh Lime Juice
  • 0.5 oz Pineapple Gum Syrup

Instructions

  • Add all ingredients to a shaker with ice.
  • Shake until well chilled.
  • Strain into a rocks glass over a large cube or crushed ice.
  • Garnish with pineapple fronds and a dehydrated lime wheel.

Notes

Deep, herbal, and tropical — the Nightjar walks the line between tiki and aperitivo.
Try it with a funky Jamaican rum or a blend of dark and overproof for added richness.
