Flavor Profile: Tropical, herbaceous, bitter, overproof funk

One for the Birds is a Jungle Bird riff from Barlow Gilmore, swapping in clear amaro for Campari and tweaking the rum combo for extra brightness.

I used an amaro from Waterpocket Distillery — light, herbal, and just bitter enough. The result is vibrant, funky, and wonderfully yellow thanks to the pineapple juice.

Ingredients

  • 1.5 oz White Rum
  • 0.5 oz Overproof Jamaican Rum
  • 1 oz Clear Amaro
  • 1.5 oz Fresh Pineapple Juice
  • 0.5 oz Fresh Lime Juice

Instructions

  • Add all ingredients to a shaker with a small amount of crushed ice.
  • Shake until ice is mostly melted.
  • Open pour into a highball glass.
  • Top with more crushed ice and garnish with a mint sprig.

Notes

The clear amaro gives this riff a lighter color and flavor.
Try with different amaros for contrast — but avoid anything too dark or syrupy.
