Toucan

Toucan cocktail icon

Flavor Profile: Tropical, fruity, citrusy, herbal

The Toucan is a sunny, equal-parts tribute to the Yellow Bird — a tropical cocktail often found at cruise ship bars and beachside resorts. But unlike its classic cousin, this riff swaps out Galliano for Yellow Chartreuse and leans into bold banana flavor with a hit of Giffard Banane du Brésil.

White rum keeps things crisp and clean, while fresh lime juice ties everything together with just the right amount of acidity. It’s bright, balanced, and pure vacation in a glass. Bonus: the name is a nod to the toucan pin that often garnishes this playful drink.

Toucan

A sunny, equal-parts riff on the Yellow Bird, the Toucan blends white rum, Yellow Chartreuse, banana liqueur, and fresh lime juice into a tropical, citrusy, and lightly herbal sipper. Inspired by cruise ship nostalgia and creative flair, it’s fruity, bold, and vacation-ready. Think Yellow Bird with a Chartreuse glow and a banana-lime twist — a tropical remix through and through.

Ingredients

  • 0.75 oz Plantation 3 Stars Rum
  • 0.75 oz Yellow Chartreuse
  • 0.75 oz Giffard Banane du Brésil
  • 0.75 oz Fresh Lime Juice

  • Shake until well chilled.
  • Fine strain into a chilled coupe glass.
  • Garnish with a pineapple leaf and a toucan pin

Notes

A tropical remix of the Yellow Bird, reimagined with Yellow Chartreuse and banana liqueur. Equal parts citrusy, fruity, and gently herbal — a cocktail made for sunshine, hammocks, and steel drums.
