Flavor Profile: Spiced, tropical, herbal, smoky

Created in collaboration with Dos Maderas, Gran Canaria is a bold and layered riff on the Jungle Bird that blends Caribbean fruit with Spanish influence. The base spirit — Dos Maderas 5+3 — is aged in both the Caribbean and Sherry casks, adding depth and sweetness to the tropical build.

Yellow Chartreuse stands in for Campari, while falernum and banana liqueur lean into the tiki vibe. Ancho Reyes and Angostura bitters add subtle heat and spice, giving this drink a unique, well-rounded edge that finishes with warmth and complexity.

A Jungle Bird riff created for a collaboration with Dos Maderas Rum, the Gran Canaria features Yellow Chartreuse, falernum, banana liqueur, and Ancho Reyes for a rich, tropical cocktail with a touch of spice. Complex, smooth, and a little wild — this is a luxurious twist on a tropical classic.

Ingredients

  • 1.5 oz Dos Maderas 5+3 Rum
  • 1.5 oz Fresh Pineapple Juice
  • 0.5 oz Yellow Chartreuse
  • 0.5 oz Fresh Lime Juice
  • 0.25 oz Velvet Falernum
  • 0.25 oz Banana Liqueur
  • 0.25 oz Ancho Reyes
  • 2 dashes Angostura Bitters

Instructions

  • Add all ingredients to a shaker with ice.
  • Shake well until chilled.
  • Strain into a rocks glass over a single large ice cube.
  • Garnish with pineapple fronds and a torched pineapple wedge.
