The Jungle Bird is a true tiki original — created in 1973 at the Aviary Bar in Kuala Lumpur, Malaysia. It’s one of the only classic tropical cocktails to feature a bitter aperitif, and it works beautifully.

This bittersweet blend of blackstrap rum, Campari, pineapple, lime, and demerara syrup brings both depth and refreshment. The rum adds richness, the Campari sharpens the finish, and the pineapple ties everything together with a lush tropical note.

It’s the perfect gateway cocktail for amaro lovers entering the tiki world — and an ideal jumping-off point for dozens of riffs.

Ingredients

  • 1.5 oz Dark Rum
  • 0.75 oz Campari
  • 0.5 oz Simple Syrup
  • 0.5 oz Fresh Lime Juice
  • 1.5 oz Fresh Pineapple Juice

Instructions

  • Add all ingredients to a shaker with ice.
  • Shake well until chilled.
  • Strain into a rocks glass over crushed or cubed ice.
  • Garnish with a pineapple wedge and a mint sprig.

Notes

First served at the Aviary Bar in Kuala Lumpur, the Jungle Bird is one of the only tiki drinks to feature Campari.
Its signature balance of bitter, sweet, and tropical makes it a modern classic worth revisiting — and riffing on.
