The Paper Plane is a modern classic created by Sam Ross for the opening of The Violet Hour in Chicago. Equal parts bourbon, Aperol, Amaro Nonino, and fresh lemon juice, it’s perfectly balanced, zesty, and just bitter enough to keep you coming back.Ross recommends using a bold, high-proof bourbon — and don’t be afraid to swap in a local amaro with similar flavors if Nonino isn’t on your shelf. It’s a cocktail that invites both precision and play.

Ingredients

  • 0.75 oz Bourbon
  • 0.75 oz Aperol
  • 0.75 oz Amaro Nonino
  • 0.75 oz Fresh Lemon Juice

Instructions

  • Add all ingredients to a shaker with ice.
  • Shake until well chilled.
  • Fine strain into a chilled coupe glass.

Notes

Use a bold, high-proof bourbon. If Amaro Nonino isn’t available, sub in an amaro with gentian, bergamot, or herbal depth. The Paper Plane pairs beautifully with pre-dinner moments or late-night hangs — a go-to equal parts cocktail.
